Long lived perennial crop - can live up to 15 years
Purple varieties are more slender and tender than the green - because of this they are great raw or slightly cooked in salads. Purple color does fade with cooking.

May not perform well in warmer areas such as TX, MS, GA, LA, AL, or FL

Plant Height is 24-36"

Plant 6-8" apart allowing 3-6' between rows. Planting is similar to growing Indeterminate Potatoes, digging a trench 8-10" deep and placing bare root plants in. Cover roots lightly then as the plants begin to grow cover more with soil and repeat a few times until trench is filled. You will be able to harvest the 2nd year.
